If you like fried zucchini, this is a healthier version that is just as crispy. I think I might actually like this more, which isn't always the case with "fried substitutes".
1/4 cup dry breadcrumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
2 Tbsp. milk
2 1/2 cups zucchini, sliced about 1/4" thick (about 2 small zucchinis)
cooking spray
Preheat the oven to 425°. Combine the first 5 ingredients in a medium bowl and stir. Place milk in a shallow bowl. Dip zucchini slices in milk, then breading mixture.
Place the coated slices on an oven-proof wire rack (like a cooling rack for cookies) coated with cooking spray, and then to keep your oven clean, I recommend placing the racks on a cookie sheet. Bake at 425° for 30 minutes, or until browned and crisp.
