Here's a recipe for some candy that I made yesterday. I was reading an article about which nuts are healthiest for you (pecans are one of the six), and that reminded me of all the pecans I had in my freezer. I probably negated the health benefits of the pecans with the cup of brown sugar, so next time I will try it with Splenda brown sugar. If you do that, let me know how it tastes.
1 egg white
1 cup brown sugar
1 tablespoon flour
1/8 teaspoon salt
1 teaspoon vanilla
2 1/2 to 3 cups pecan halves
Beat the egg white with an electric mixer until it's foamy. Slowly beat in the brown sugar mixed with flour. Add salt and vanilla flavoring, then fold in pecans.
Transfer pecans to a greased baking pan and bake at 250° for about 45 minutes.
