Cheddar-Dill Biscuits

I had these with the roasted citrus-crumbed cod and cheddar sage mashed potatoes last night, as well as two more when they were fresh out of the oven that afternoon. I've had this recipe for a long time and have just never tried it. Another one that's really easy, really delicious!

1 1/2 cups + 2 Tbsp. flour
2 tsp. baking powder
1 tsp. paprika
3/4 tsp. salt
5 Tbsp. cold unsalted butter, cut up
2 Tbsp. dill
1 cup sharp cheddar cheese, shredded
1/2 cup milk
1/4 cup heavy cream

1. Preheat oven to 375, with the rack in the middle.

2. Whisk flour, baking powder, paprika, and salt in a large bowl. Add butter pieces and blend with your fingers until it forms a coarse meal with pea sized butter lumps. Add the remaining ingredients and stir until a dough forms.

3. With floured hands, divide the dough into eight portions and gently form 2" high biscuits on a cookie sheet, placing them 2" apart. Bake until bottoms are golden and are cooked through, about 30 minutes.

*I decided to put a tiny piece of butter on top of each biscuit right as they came out of the oven, so it would melt into it.
