Grilled Stuffed Zucchini Boats
4 zucchini, sliced lengthwise
1/3 cup shredded cheddar-monterrey jack cheese
pico de gallo
cumin
salt & pepper
You can use store-bought pico de gallo or make your own, finely chopping the following:
4 roma tomatoes, seeded
1/2 to 1 whole red onion
1-2 jalapenos
handful of cilantro
lime juice
Preheat your grill to 400.
Scoop out the seeds from the zucchini halves with a spoon. Season the insides with cumin, salt, and pepper.
Mix the cheese in with the pico de gallo. Spoon it evenly into the zucchini boats and place them all on a piece of foil.
Grill them on the foil for 15 minutes, until the zucchini is tender and the cheese is melted.
