Beef Stroganoff

1          lb         lean ground beef
½         c           chopped onion
¼         c           butter or margarine
2          tbsp      flour
1          tsp        salt
1          c           fat-free sour cream
1          clove     minced garlic
¼         tsp        pepper
4          oz         jar of mushrooms, sliced and drained
1          can       cream of chicken soup, healthy recipe
1          bag       egg noodles, cooked according to package directions

Brown beef in a large skillet. Drain the fat, if necessary, and add onion and butter. Cook until onions are softened. Stir in flour, salt, garlic, pepper, and mushrooms. Cook 5 minutes, stirring constantly.

Stir in soup, heat to boiling, stirring constantly. Reduce heat and simmer, uncovered, for 10 minutes.  Stir in sour cream and heat through.  Serve over egg noodles.
