Slaw:
1 whole lemon, juiced
1/3 c low-fat mayonnaise
12 oz broccoli slaw
Chicken:
1.3 lbs chicken tenders
3 tbsp low-salt Cajun seasoning
2 tbsp canola or vegetable oil
1 whole lemon, quartered for garnish
Toss slaw with mayo and lemon juice. Season with salt and pepper if necessary.
In a large skillet, heat the oil. Season the chicken with the Cajun seasoning, and cook about 5 minutes on each side, until browned. Serve with slaw and a wedge of lemon to squeeze over the chicken.
