French Toast Casserole

5-6       c           cubed bread
4                      eggs
1 ½       c           skim milk
3          tcbsp     sugar, divided
¼         tsp        salt
1          tsp        vanilla
½         tbsp      butter, softened
1          tsp        cinnamon

Preheat oven to 350. Lightly butter a 9-inch square glass pan. In a bowl, beat the eggs, milk, 1 tbsp of the sugar, salt, and vanilla. Place the bread in the glass pan, and pour the egg mixture over it. Toss to coat, and let it sit for 10 minutes. Dot the butter on top of the bread pieces. Top with the remaining 2 tbsp of sugar and the cinnamon.  Bake for 50 minutes, until the top is golden.


Makes 9” square pan              1 hour
