Stuffed Portobello Mushrooms

4                      portobello mushroom caps, stems and gills removed and washed thoroughly
                       cooking spray
1          c           chopped red tomato
1          c           chopped yellow tomato
½         c           Panko breadcrumbs
1 ½       c           mozzarella cheese
¼         c           chopped fresh chives
¼         tsp        salt
¼         tsp        pepper
3          tbsp      melted butter

Preheat broiler. Place mushrooms, gill sides down, on a foil-lined baking sheet coated with cooking spray. Broil the mushrooms for 5 minutes. While mushrooms broil, combine the tomatoes, panko breadcrumbs, cheese, and chives. Turn mushrooms gill-side up, wiping away any excess liquid, and fill the mushroom caps with the breadcrumb mixture. Drizzle melted butter over the top. Place back under the broiler for 5 more minutes or until cheese is melted.
