Serves 2-3
1 baguette
2 tbsp olive oil
1/3 c apple butter
4 tbsp dijon mustard
1/2 lb thinly sliced deli ham
1 1/2 cups watercress or other greens
6 oz brie, sliced into small pieces
Slice baguette lengthwise. Brush oil on the outside of the bread and spread mustard and apple butter on the inside. Arrange ham, brie, and greens inside and slice into individual sandwiches.
Heat a grill pan or panini press and grill the sandwiches until bread is crisp and cheese is melted.
