1 can chickpeas
2 Tbsp. mayonnaise
1-2 tsp. spicy brown or dijon mustard
1/4 tsp garlic powder
1 Tbsp dill or sweet pickle relish
1 tsp dried onion flakes
1/4 tsp lemon juice
1 green onion, chopped
salt & pepper
Rinse and drain garbanzo beans and mash them with a potato masher.
In a bowl, combine beans with remaining ingredients and mix well. Eat on bread or in pita pockets.
Other possible additions include chopped celery, cucumber, paprika, a couple drops of balsamic vinegar, cumin.
