Cheesy Chicken Bake

1 1/2 lbs tomatoes, cut into large cubes
1 small onion, finely chopped (1cup)
1/2  c chopped parsley
3 cloves garlic, chopped
2 tbsp olive oil
4 boneless, skinless chicken breasts (6 oz. each; split into cutlets if thick)
1 cup grated fontina or mozzarella

Preheat broiler. In 9x13 pan, combine tomatoes, onion, oil, parsley, garlic, and season with salt & pepper. Place chicken on top. Broil 8 minutes,  turn over, and broil 6 more imnutes until sauce bubbles. Sprinkle with cheese and broil about 1 minute to melt.
