3/4 c feta
1/2 c thawed frozen chopped spinach, squeezed dry
3 tbsp cream cheese
1/4 c chopped scallions
2 cloves garlic, minced
3 tbsp olive oil
4 boneless, skinless chicken breasts (6 oz each)
Preheat oven to 450. In bowl, mix first 5 ingredients. Season chicken with salt and pepper. Cut a lengthwise pocket in each chicken breast and stuff with spinach mixture. In ovenproof skillet, heat oil over medium-high heat and cook chicken until golden, 4 minutes per side. Transfer to the oven and bake 5-7 minutes.
