5 eggs
2 oz shredded gruyere (1/2 cup)
2 oz neufchatel
2 T cottage cheese
salt & pepper
3 slices bacon, cooked & chopped
Step 1
Process eggs, Gruyère, cream cheese, cottage cheese, salt, and pepper in a blender on low until smooth, about 20 seconds. Distribute bacon among cups in a silicone muffin tin, and top each evenly with egg mixture.
Step 2
Bake at 350 for 15-20 minutes, until fully set.
