Sausage & Potato Breakfast Casserole

1 lb breakfast sausage

4 scallions, chopped

1 red bell pepper, chopped

10 eggs

1 1/4 c heavy cream

1 tbsp dijon mustard

2 tsp hot sauce

3/4 tsp salt

1 tsp black pepper

8 oz shredded cheddar

1 30-ounce package hash browns, thawed


1. Grease 9x13 casserole dish and preheat oven to 350.

2. In a large skillet, cook the sausage fully. Add the red bell pepper and the scallions to the skillet and cook 3 more minutes. Transfer to a plate for later. 

3. In a large bowl, whisk together the eggs, heavy cream, mustard, hot sauce, salt, and black pepper. 

4. In the casserole dish, slowly combine the egg and sausage mixtures, the hash browns, and 1 1/2 cups of the cheese until everything is evenly distributed. Top it with the remaining 1/2 cup of the cheese.

5. Cover with foil and bake for 50 minutes. Remove the foil, increase the temperature to 400, and finish baking for 10-15 minutes, until the center is set and the top is slightly golden. Let rest 10 minutes, then serve!
