14 oz Beyond hot Italian sausage, chopped
8 ounces feta cheese
3/4 cup yogurt
1 tsp minced garlic
black pepper
2 roasted red bell peppers, chopped or cut into strips

Preheat the oven to 450 and place the 4 flatbreads on a cookie sheet. Once it is hot, toast the flatbreads for 3-5 minutes, then set aside.
Heat a small amount of olive oil in a skillet and add the chopped sausage. Cook until it begins to brown and become crisp, and set aside.
Blend half of the feta with the yogurt and garlic in a small food processor. Season with pepper to taste.
Top each toasted flatbread with the yogurt mixture, sausage, bell peppers, and the other 4 ounces of the feta cheese. Bake for 10 minutes, until edges are browning and cheese is warmed and softened.
