Cheesy Chicken Fritters

Fritters:
1 1/2 lbs chicken breast, pulsed until roughly ground in the food processor
2 eggs
1/3 cup mayonnaise
1/3 cup flour
1 1/3 c shredded mozzarella
1 1/2 Tbsp dill
salt & pepper
olive oil

Aioli:
1/3 c mayonnaise
1/2 Tbsp. minced garlic
2 Tbsp. lemon juice

To serve:
Lemon wedges

Combine all the chicken fritter ingredients in a bowl and stir to thoroughly combine. Heat a large griddle and grease with olive oil. Scoop out fritters by the large spoonful (about 3 Tbsp each). Cook on both sides until the temperature inside them is 165. 

Combine all aioli ingredients and serve fritters with a side of the aioli sauce and lemon wedges.
